Peru Organic Micro-Lot – In Peru the bulk of coffee production comes from small farms owned by people who follow organic farm management practices. Producers typically cultivate coffee on just a few acres of land intercropped with shade trees, bananas, corn, and beans. They carefully harvest and sort cherries before depulping, fermenting, washing, and drying the coffee using their own micro-mills.
This organic micro-lot comes from Edward Alexy Gonzales Mundaca. Edward harvests and processes his crop on his 20 acre farm called Las Huacas. Using his micro-mill, Edward carefully harvests cherries and macerates them for 24 hours. Then, he floats the cherries to remove less dense and damaged coffee before depulping. After depulping, the beans covered in mucilage, are fermented for another 45 hours and then washed to remove the mucilage. Next the coffee is gently dried on covered raised beds.
Edward uses ‘Aroma del Valle’ to assist in preparing his coffee for export so he can earn a fair price in the international market. He has been able to use the money earned from the harvest to pay for his children’s education and pursue his dream of participating in the Cup of Excellence.
While Edward dreams of participating in the Cup of Excellence, Max Perez has earned several cup of excellence awards and his micro-lot is going fast. Order a 1/2 lb while supplies last Guatemala Pacamara Natural Micro-lot.

What is the Coffee of the Month? It is a program Salt Lake Roasting offers to give you the opportunity to try something new, for FREE, while showing you that we appreciate your business. If you are looking for a monthly coffee delivery service, please go to our coffee subscriptions and select from one of seven subscription plans.
How does it work? For every five pounds you purchase via mail order, you will receive a sixth pound of our Coffee of the Month (COM) for FREE!
Will the COM automatically appear in my cart? Good question! The answer is that you have to do a little bit of the work. Simply add five pounds of your favorite coffee to your cart, then add the COM to your cart and we will take care of the rest.
Oh, and one more thing…. when you add the COM to your cart before you satisfy the 5lb requirement, you will see a charge. Once your cart meets the terms of the program, the price will drop off. If by chance you keep the COM in your cart without satisfying the program’s requirements, you will be charged.
We look forward to serving you and are excited for you to try new coffees that you might not otherwise experience. Happy brewing!
